How to Make Sweet and Sour Ribs

Prepare Materials

  • Young pork ribs: 500 grams
  • Dried purple onion: 4 bulbs
  • Dried garlic: 4 bulbs
  • Fresh chili: 2
  • Tomatoes: 3-5 fruits
  • The seasonings are all set as follows: seasoning seeds, fish sauce, salt, main noodles, cooking oil, pepper, sugar, vinegar.


Step 1: Prepare the Ingredients

For the ingredients for making sweet and sour ribs such as dried purple onion, dried garlic, peel off the skin and then wash it. When it is cleaned, you smash it and chop it into small pieces, put it in a bowl.

Fresh chili you should choose horny chili, after washing, use the tip of a knife to cut along the chili. Remove chili seeds out, because chili seeds when eaten are too strong and cause stomach pain when eating. Then cut the peppers into small pieces.

Tomatoes to make sweet and sour ribs need to choose tomatoes that are just ripe. Should not choose tomatoes that are still green or nursed because green tomatoes when eaten will be harmful to health. Wash the prepared tomatoes, then cut them into 4 and remove the seeds. Continue to cut tomatoes into dices into separate bowls.

Step 2: Prepare Ribs

In the way of making sweet and sour fried ribs, the preliminary processing of ribs is very important. It determines the taste of the dish, if you do not prepare and marinate the ribs well, the stir-fried ribs will not have the rich and delicious flavor as expected.

Young ribs are purchased, you need to wash them with water, if possible, you should soak them in dilute salt water for about 10 minutes.

When the ribs have been soaked, washed with water, cut them into bite-sized pieces. If the ribs are large, you can cut them one by one and each piece is about 4cm long. As for the small ribs, you can cut two ribs.

When the ribs are done, blanch in boiling water for about 30 seconds, then remove and drain.

When the ribs are drained of water, put the ribs in a bowl and marinate them with spices, add about ½ teaspoon of sugar, ½ teaspoon of salt, and a little pepper. In order for the ribs to absorb the best spices, you can wear food gloves and proceed to stuffing the ribs, stuffing for about 3-5 minutes and then letting the ribs rest for 30 minutes. So the spices have been absorbed into the best ribs.

Step 3: Prepare Vinegar to Cook Ribs

The vinegar used to make Northern style sweet and sour ribs will be mixed according to the following ratio: 2 tablespoons of rice vinegar, 2 tablespoons of sugar, 5 tablespoons of filtered water and ½ teaspoon of salt. You stir well until the mixture is completely dissolved, wait until seasoning, then add.

Step 4: Fry the Ribs

Cooking sweet and sour ribs is quite simple, the first thing you need to do is put the pan on the stove, when the pan is hot, add 4 tablespoons of cooking oil.

Wait until the oil is hot, then add minced garlic and red onion, stir well, until these ingredients turn golden, then take out the bowl.

After the onion frying pan is picked up, put the marinated ribs into the frying pan and fry at a moderate heat. During frying, remember to turn the ribs evenly so that both sides are golden brown. When the ribs turn a beautiful golden color, remove the ribs to a plate to drain the oil.

Continue to add the vinegar-sugar mixture mixed in step 3 to stir well, seasoning to taste. Cook until the rib sauce thickens, then add finely chopped chili. Just need to cook for about 2 more minutes for the chili to infuse the spicy flavor into the ribs.

Step 6: Finish and Enjoy

Turn off the heat, put the ribs and thick sauce on a plate, add the fried onion and garlic on top. So you have a delicious and attractive Northern style sweet and sour fried ribs.

If you want to enhance the flavor of the dish, you can add a little ground pepper. With spicy aroma, the rich aroma of pepper will make your dish much more attractive.

Note: If you want to use honey instead of sugar to make sweet and sour ribs, however, the amount of honey to marinate needs twice the amount of sugar. Because the sweetness of honey is much lower than white sugar.
